Mouthwatering Monday – Shredded Mango Chutney

Something sweet…. something spicy…. what should I have? But, I want something which is both spicy and sweet. 😦 If a little sour, that would be better too.

Here Comes Shredded Mango Chutney. World is peaceful again. 😎

Ingredients

  • 10 Big Mangoes(around 2 lbs), peeled and shredded
  • 2 lbs Sugar
  • 2 tbsp Salt
  • 2 tbsp Red Chilli Powder
  • 2 tbsp Cumin Powder
  • 1 tbsp Garam Masala

Method

  • Add Sugar, Salt, Garam Masala, Red Chili Powder and Cumin Powder to shredded Mangoes.
  • Let is sit for 5 hours.
  • Heat the whole mixture on medium for 30 minutes.
  • Keep stirring till the sugar dissolves completely and desired consistency is achieved.
  • Let it cool and then put in an air tight container.
  • Voila! You are done.

Shredded Mango Chutney is best served with Parathas, or Bread. You can also use it to marinate your chicken, or just eat it simply. My kids love to use it as jam on their bread. My hubby enjoys it as a side dish. I just like to eat it, raw. πŸ˜›

I know. I know, only last week I have posted a Mango Recipe – Aamras, but this is Mango season, and I should be allowed to post more than one. Right??

Also, I am a little biased towards Mangoes. Because, I LOVEEEE them. πŸ™‚

For all the mothers out there, you will agree how hard it is to feed your little ones healthy food. They may eat some of the healthy foods, but not all. Same is with my kids. When it comes to nuts (all of the healthy nuts family), my kids only prefer to eat Cashews, Pistachio and Black Raisins. They can eat cashews with their hands full, but no walnuts and certainly no Almonds. They hate Almonds. :@

So, how to feed them Almonds???

Voila!!!!

Lets blend them with some other delicious food item.

Yes!!!! That is what exactly I did. I made a delicious Mango Smoothie, with Almonds. A Mango Almond Smoothie. All is well now, in this World. πŸ˜€

Here is the recipe for Mango Almond Smoothie.

Ingredients:

  • 2 Mangoes – chopped (I have used Alphonso)
  • 20 Almonds (I soaked them in milk overnight with skin peeled off)
  • 2-3 tbsp Sugar (as per the sweetness desired; also depends on the sweetness of mango you have chosen)
  • ΒΌ tbsp Cardamon Powder
  • Β½ cup ice cubes (as desired by you)

Method:

  • Blend Mangoes, Sugar, Cardamon, and Almonds in a blender, till smooth.
  • Add Ice cubes and blend further.
  • Pour them in glasses and serve cold.
  • For garnishing you can use almonds, mango pieces, or even mint leaves.

 

That’s it and Mango Almond Smoothie is ready. You have a tasty and healthy fruit smoothie in your hand in less than 10 minutes.

Kids will be happy to oblige you by finishing up the last drop of this smoothie, and you will be more than happy to see their smiles, stretched from one ear to another. πŸ™‚

Mouthwatering Monday – Aamras

Aamras Dessert

Aamras is a famous Indian Mango delicacy. Best thing about aamras is that, it can be eaten as a dessert and also along with Poori or Chapati. It’s the easiest dessert to make and that too with the natural mango taste. No artificial, healthy food if you contain the sugar level. πŸ™‚

And, it tastes Yummy!!!! πŸ˜€

All mango lovers, do try out this very simple recipe.

 

Ingredients:

  • 2 Mangoes (preferably Alphonso mangoes)
  • 4 tbsp Sugar ( Or as per your taste and sweetness of Mango used. I prefer less sweet and used only 2 tbsp)
  • ΒΌ tbsp Cardamon Powder
  • 1-2 saffron strands (I didn’t used them, but would prefer using them)
  • 3 tbsp Milk (optional, based on the consistency you want)

 

Method:

  • Wash, peel, and chop mango pulp.
  • Blend mango pulp in a blender, along with sugar and cardamon powder, to a fine puree.
  • Add milk to blender, as per consistency desired.
  • Check for sweetness too. Add more sugar if required.
  • Serve chilled. (you may like to put it in refrigerator before serving)

 

That’s it. All it took is 10 minutes, and dessert is ready.

You can eat it separately as a dessert or if you like you can top the taste by serving it with vanilla ice-cream.

I have served it with raisins and cashews. It looked awesome and tasted heavenly. πŸ™‚
