Mouthwatering Monday – Rogan Josh

Rogan Josh
Rogan Josh served with Lamb Chops and Hash Browns

Rogan Josh is a Mutton recipe cooked in Indian style with lots of flavoring spices. It is believed to be a Kashmiri recipe but I bet that every meat loving Indian would love eating it.

Here is the recipe.

Ingredients

Method

  • Clean Lamb/Mutton thoroughly and cut into 2 inch pieces.

  • Marinate it for overnight or for 3-4 hours with Yogurt, ginger garlic paste, 1 tbsp of oil.

  • After marination, heat oil in a pan and pour meat on it when hot. Cook till it turns brown. Set aside.

  • Heat Oil in a pan and add bay leaves, black and green cardamon, julienned ginger and chopped garlic.

  • Add Onions and cook till they are translucent.

  • Add rest of the spices and cook till oil starts leaving the sides.

  • Add some water (as per your desired consistency) and cook it to boil.

  • Mix cooked Lamb/Mutton to it and cook it for 45 minutes on low to medium heat.

  • Add Garam masala.

  • Garnish with cilantro and serve hot with rice or roti/naan.

Mouthwatering Monday – Baked Veggie Chips

Kids love Chips. If allowed they can live on just chips.

Are they tasty? Yes. Are they addictive? Yes.

Are they healthy? No.

So, I devised a new plan. Everytime my kids crave for chips I gave them home baked Veggie chips. They don’t like it as much they loved the ones from the market, but who cares? I am their Mother, and I will feed them what I think is right for them. Mommy Power 😛

  • Wash them with water and then rinse thoroughly.
  • Sprinkle some salt and let them rest for 5-10 minutes.
  • Remove excess water, if any.
  • Spray baking Pan with some oil and lay your veggie chips on it.
  • Sprinkle little salt and try some herbs if you want, like I have used Thyme here.
  • Bake for around 40 minutes, or when veggies turn a little crispy.
  • Remember, some vegetable need more time in oven so just put them in different pans, if you can, and bake them till they are crisp.
  • Let them rest for 2 minutes, and then serve with a dip or chutney.

Simple and healthy recipe.

Mouthwatering Monday – Oven Baked Mathri

Oven Baked Mathri by Jyoti Singh
Oven Baked Mathri

Mathri and Namakpaare are the most eaten snacks in India. My husband love these salty snacks; only problem – It’s not a healthy snack.  😦

To overcome this problem I tried the oven baked method instead of frying them in oil.

Ingredients

Method

  • Preheat your Oven to 350 F.
  • Mix Flour, cumin seeds, cumin powder, baking powder and salt in a large bowl.
  • Add melted butter/ghee to it and with the help of water knead into a dough.
  • To make Mathri, make small balls of dough and place them on baking sheet; just like you do with cookies.
  • To make Namakpaare, flatten the dough and then cut it into elongated rectangular shape with the use of a knife.
  • Spray some oil and put Mathri and Namakpaare on baking sheet.
  • Bake them in Oven for 20 minutes, turn them over and again bake for 15 minutes.
  • Oven temperature varies so just make sure that your Mathris are light golden brown and are crisp.

Mathris and Namakpaare are ready to serve. You can team them up with coriander or mint chutney, or ketchup. Best served along with a hot cup of tea or coffee.

Mouthwatering Monday – Egg and Potato Fritters

Egg and Potato Fritters by Jyoti Singh
Egg and Potato Fritters

Egg and Potato fritters, were an experiment turned out good. Just to tell you, all my experiments are not as successful. I tried making raspberry pie last week, which looked like a disaster, although it tasted yummy; but we will talk about my failures sometime later (never). Today we will just make some fritters, with potato and eggs. 🙂

Ingredients

Method

  • Except egg, mix all the other ingredients in a bowl to make a sticky dough.
  • Roll this mix into small balls of 2 inches and flat them with your hand.
  • Heat oil in a shallow pan on low heat.
  • Whisk your egg a little to mix yellow part and add a pinch of salt to it.
  • Roll small dough balls into egg mixture thoroughly.
  • Fry these fritters on low heat, turning them both sides, till they are golden brown.
  • Keep in mind to heat on low flame, as egg cook easily so we have to give some time to potatoes for cooking.
  • Take them out, and serve with chutney or ranch/dip of your choice.

They should be served hot. Best combination is with tea or coffee. Enjoy this snack while I am off to learn about pies. 😦
