Mouthwatering Monday – Simple Tortilla Rolls

A simple veg Tortilla rolls is what every Mom should know to make. Easy, quick and healthy and no fuss eating. since they are so easy to make and you can fill them with a variety of filling; I best thought of writing this recipe in a totally different way.

So, here it is.

Off-Course you will need a tortillas or even if you don’t have that, you can use a flat bread/Roti/Chapati, to use as wrapper for your filling.

For filling use any vegetables you like. I have used lettuce, cabbage, carrots, green chillies, pickled onions, green pepper. Julienne it or cut into small cubes. For mixing them together you can use Mayo or if you want to go healthy way, use yogurt of your preferred taste.

That’s all the things you need. Wrap them in your style. Serve them the way you want. I have served them hot with Mint and Tomato dip. 🙂

Mouthwatering Monday – Baked Veggie Chips

Kids love Chips. If allowed they can live on just chips.

Are they tasty? Yes. Are they addictive? Yes.

Are they healthy? No.

So, I devised a new plan. Everytime my kids crave for chips I gave them home baked Veggie chips. They don’t like it as much they loved the ones from the market, but who cares? I am their Mother, and I will feed them what I think is right for them. Mommy Power 😛

Ingredients

  • You can use vegetables like Potato, Radish, Zucchini, Carrot or any other of your choice.
  • Salt as required.
  • Oil to spray.

Method

  • Preheat your Oven to 400 F.
  • Cut your vegetables in thin slices or in shape of your preference.
  • Wash them with water and then rinse thoroughly.
  • Sprinkle some salt and let them rest for 5-10 minutes.
  • Remove excess water, if any.
  • Spray baking Pan with some oil and lay your veggie chips on it.
  • Sprinkle little salt and try some herbs if you want, like I have used Thyme here.
  • Bake for around 40 minutes, or when veggies turn a little crispy.
  • Remember, some vegetable need more time in oven so just put them in different pans, if you can, and bake them till they are crisp.
  • Let them rest for 2 minutes, and then serve with a dip or chutney.

I have served these delicious veggie chips with Mint chutney. Awesome combo. Try it, you will not regret. 🙂

Mathri and Namakpaare are the most eaten snacks in India. My husband love these salty snacks; only problem – It’s not a healthy snack.  😦

To overcome this problem I tried the oven baked method instead of frying them in oil.

Ingredients

Method

  • Preheat your Oven to 350 F.
  • Mix Flour, cumin seeds, cumin powder, baking powder and salt in a large bowl.
  • Add melted butter/ghee to it and with the help of water knead into a dough.
  • To make Mathri, make small balls of dough and place them on baking sheet; just like you do with cookies.
  • To make Namakpaare, flatten the dough and then cut it into elongated rectangular shape with the use of a knife.
  • Spray some oil and put Mathri and Namakpaare on baking sheet.
  • Bake them in Oven for 20 minutes, turn them over and again bake for 15 minutes.
  • Oven temperature varies so just make sure that your Mathris are light golden brown and are crisp.

Mathris and Namakpaare are ready to serve. You can team them up with coriander or mint chutney, or ketchup. Best served along with a hot cup of tea or coffee.

Mouthwatering Monday – Banana Oatmeal Cookies

Cookies… cookies. I love cookies. My kids too. What we don’t love is Oatmeal.

Oatmeal is healthy and cookies are not. What to do??

Idea!!!

Lets make Oatmeal Cookies. Why not add Banana too and make Banana Oatmeal Cookies. 😎

Ingredients

  • 2 mashed Bananas
  • 1 cup Oats
  • 10-12 Raisins (optional)

Method

  • Mix Oatmeal with mashed bananas.
  • Add Raisins to the mixture and mix.
  • Scoop out mixture on cookie sheet and bake them for 15 minutes at 350.
  • It would be lightly brown when done.
  • Take them out and let them cool for 2 minutes before serving.

It is a good way to eat Oatmeal and Banana together. These cookies can be served with tea or coffee, or they can be eaten by themselves.
