Mouthwatering Monday – Aamras

Aamras is a famous Indian Mango delicacy. Best thing about aamras is that, it can be eaten as a dessert and also along with Poori or Chapati. It’s the easiest dessert to make and that too with the natural mango taste. No artificial, healthy food if you contain the sugar level. πŸ™‚

And, it tastes Yummy!!!! πŸ˜€

All mango lovers, do try out this very simple recipe.

 

Ingredients:

  • 2 Mangoes (preferably Alphonso mangoes)
  • 4 tbsp Sugar ( Or as per your taste and sweetness of Mango used. I prefer less sweet and used only 2 tbsp)
  • ΒΌ tbsp Cardamon Powder
  • 1-2 saffron strands (I didn’t used them, but would prefer using them)
  • 3 tbsp Milk (optional, based on the consistency you want)

 

Method:

  • Wash, peel, and chop mango pulp.
  • Blend mango pulp in a blender, along with sugar and cardamon powder, to a fine puree.
  • Add milk to blender, as per consistency desired.
  • Check for sweetness too. Add more sugar if required.
  • Serve chilled. (you may like to put it in refrigerator before serving)

 

That’s it. All it took is 10 minutes, and dessert is ready.

You can eat it separately as a dessert or if you like you can top the taste by serving it with vanilla ice-cream.

I have served it with raisins and cashews. It looked awesome and tasted heavenly. πŸ™‚

Something sweet with a little spicy flavor along with a tangy sensation, but above all finger licking better version of potato fries. This is Honey Chilli Potatoes.

I have always loved this particular snack, as it offers so many different tastes to you. Specially the ones I ate in Mainland China, Gurgaon. Those Honey Chilli Potatoes were amazing. I was longing for that taste and thus decided to take the whole matter into my hand. In simpler terms, decided to make them at home. πŸ™‚

Below is the recipe I followed.

 

Ingredients:

For Potatoes

 

For base sauce

  • 2 spring onions, chopped
  • 1 tbsp tomato sauce
  • 1 tsp red chilli sauce
  • 2 crushed garlic cloves
  • 1 green capsicum (I didn’t used them)
  • 2 tbsp sesame seeds (I didn’t use them too)
  • 2 tbsp honey
  • 1/2 tbsp oil

 

Method : –

  • Mix All purpose flour with salt and red chilli powder.
  • Add potatoes to flour mix, and coat them evenly.
  • Fry potatoes on medium heat till golden. Keep aside.
  • In a pan saute garlic and spring onions.
  • Add soya sauce, chilli sauce, honey, capsicum and salt.
  • Saute them and add fried potatoes and sesame seeds.
  • Mix it well and done.
  • Serve hot.

Mouthwatering Monday – Paneer Tikka

For us vegetarians, Paneer can be termed as delicious and mouthwatering as Chicken is for the Non Vegetarians. We relish Paneer dishes. Karahi Paneer is one of my favorite dishes, along with Paneer Tikka, which I have tried my hands on this weekend.

Paneer Tikka is marinated Cheese/Paneer, with spices and curd, which is grilled or baked, preferably in a tandoor, but an oven will do too.

Below is the recipe for it. I have done this with some variations so, posting my variations too, along with the original recipe.

 

Ingredients:

  • 1Β½ cup Paneer (Tofu also worked for me πŸ™‚ )
  • 2 Capsicums (Red Yellow or Green) – I have not used Capsicum coz hubby doesn’t like them πŸ˜›
  • 1 Onion
  • 1 Tomato
  • 1 cup Hung Curd
  • 1Β½ tbsp Ginger-Garlic Paste
  • 1/2 tbsp Red Chilli Powder (use Kashmiri Red Chilli if you want more Red Color)
  • 1 tbsp Turmeric Powder (Optional as per your taste/color choice)
  • 1/4 tbsp Garam Masala
  • 1 tbsp Cumin Powder
  • 1 tbsp Coriander Powder
  • 1 tbsp Chaat Masa
  • Oil to spray for baking/griling
  • Salt as per taste (You may also like to use black salt in small quantity)

Method (fairly simple):

  • Mix curd with all the spices. Add lemon juice to it. Mix well.
  • Dice vegetables and Paneer into square shapes or any shape you prefer, just small pieces πŸ™‚
  • Marinate Paneer and vegetables in the Curd mix prepared above. Put them aside for 2 hours, in fridge.
  • Preheat oven to 350 F.
  • Place your onion, tomato, capsicum(I didn’t used them 😦 ) and Paneer onto Skewers (You can use toothpicks too).
  • Spray with some olive oil.
  • Put them in oven for 10 minutes.
  • Rotate your skewers. 10 minutes more in oven and done.
  • Serve hot with chutney of your choice (preferably Mint chutney). Sprinkle some lemon juice to add that tangy taste to it.

You can garnish them with lemon wedges and onion slices.

Preparation won’t take much, except for the 2 hours of marinated time. Tasty and healthy recipe which my kids enjoyed eating too.

One more variation– I used extra gravy left after marination as separate dish or as Masala for my Paneer Tikka πŸ™‚

One Cookie….. Two Cookies…. Three Cookies

 

That’s how Otu (My 2 yr Old son) was counting cookies by watching a β€œcounting for kids video” running on TV. Suddenly, I started hearing β€œCookies, Cookies…. Mamma….I want cookies”.

 

First it was just Otu, and within seconds two more monsters Tisha and Renne joined him. Ratio of Power just got shifted to 3:1, in fact 3:0, because, I don’t have any say, when all three kids unite against me πŸ˜›

 

Only reasonable thing to do next was to convince them that they will shortly receive some cookies. On that note, I was wondering why do kids always want that particular food item, which just got out of stock. :O

 

So, I went ahead and made some plain chocolate chip cookies. But, nothing is plain when it comes to cooking. Problem being, I try something new every time I make something. So what new now? Well, you have to read more to know that.

 

Here is the simplest Recipe for chocolate chip cookies.

 

Ingredients

 

2 ΒΌ Cup All Purpose Flour

 

1 tbsp Baking Soda

 

1 tbsp Salt

 

1 Cup Butter

 

ΒΎ Cup Sugar

 

ΒΎ Cup Brown Sugar

 

1 tbsp Vanilla Extract

 

2 Large Eggs

 

2 Cup Chocolate Morsels (was out of them, so used butterscotch morsels)

 

1 Cup chopped Nuts

 

Β Experimental Cookies

 

Method

 

Β Preheat the Oven to 375 degree F.

 

Mix Flour, Baking Soda and salt.

 

Beat butter, sugar, brown sugar and vanilla extract in another bowl. Add eggs to it, one at a time, mixing thoroughly.

 

Mix the flour mixture with egg mixture.

 

Add morsels and nuts, stir well.

 

Now make small rolls and place them in baking sheet.

 

Oven time.

 

Bake for 9 to 11 Minutes.

 

Let them rest for 2 minutes, and Ready to go.

But, what was new that I talked about? Well, it got more to do with presentation.

 

So, instead of chocolate, I used butterscotch morsels, for the one thing.

 

Next to do was use shredded coconut. For this, roll your small cookie dough into shredded coconut, and then bake.

 

Third, I used my pineapple jam, as filling. Just placed a half spoon of it in the middle. Baked and done.

Fourth, I used chocolate syrup to do some fancy work on some of the plain cookies.

 

Fifth, did some mix n match.

After 10 minutes, Otu and Tisha were jumping and clapping seeing their cookies in different flavors. Renne as usual has by now forgotten about the cookies, and was busy destroying one of my book. Next mission, save the Books.

My baby Tisha turned three, and all that she was bothered about, was her birthday Cake. So, we booked a Tinkerbell Cake for her Birthday party, which was on Saturday. Big Problem : Her birthday was on Friday, 27th December.

We wished her, pampered her in every possible way on Friday, but she was still not in the Birthday mood. We took her to an animated movie, got new clothes for her, gave all the attention that she deserved on her special day. Still, she was like β€œNo, It’s no Birthday”.

What’s a birthday, without a cake? She was right. So, I decided to bake a small cake for her. Small because in my family no one seems to have a sweet tooth. We don’t like eating cakes. Even my kids don’t like eating sweets much. All that Tisha wanted on her birthday was to cut the cake, not to eat it.Β  😦

I have baked cakes before, but this time I wanted to try something which is quick and easy to make, taste doesn’t matter. (I am not gonna eat it, so why does it should matter πŸ™‚ ). I was going through all the cake recipes, when I stumbled on this easy to make 3 minute chocolate mug cake. Voila!!!!

Ingredients:

All Purpose Flour (Maida) – 4 tbsp

Sugar – 2 tbsp

Cocoa Powder – 2 tbsp

Egg – 1

Milk – 3 tbsp

Butter/Oil – 3 tbsp

Vanilla Extract – ΒΌ tbsp

Choco Chips – 1tbsp (I was out of them, so didn’t use)

Method:

Add and mix all the dry ingredients.

To this add Egg and mix really well.

Pour in milk and oil as well to make it smooth.

Make sure there are no lumps.

Add Choco chips and vanilla extract. Mix well.

Put this mixture in a Microwave safe Mug. (I have used a bowl, to have a small cake shape)

Microwave it for three minutes on high.

And done. πŸ™‚

I used some M&Ms and chocolate for decoration. All it took to make this cake was 5 minutes.

Some friends also joined in the small celebration and Tisha cut the cake happily. Icing on the cake, it was not bad in taste. Although, it was not as good as a cake baked in Oven for half an hour, but still it was a quick fix. Tasted okay, looked more than okay. Happy Ending. πŸ™‚
