Omelets are ‘The Best’ when you want to eat, something tasty, healthy and which is quick to make too. I have made Omelets many times and with many different combinations, but so far, Spanish Omelet or shall I say Tortilla is the best, that I have tasted.

It’s mostly known as Tortilla, and in English as Spanish Omelet, just to avoid confusion with the normal Egg Omelet.

Spanish Tortilla is made with Potatoes and Eggs. Onions are a modern addition to this traditional Spanish dish. What makes it stand out from the rest, is its juicy taste, which was missing in normal Omelet.

Enough writing about it, now it’s time to make and eat. So, here we go with the recipe of Tortilla / Spanish Omelet. 😆

Ingredients:

  • 6 Eggs
  • 2 Potatoes, cut into finger shape
  • 1 big Onion, chopped
  • 1 Green/Red Pepper, finely chopped
  • 2 Green Chillies, finely chopped
  • Salt, as per taste
  • ¼ tbsp Black Pepper
  • 1 tbsp oil/butter

Method:

  • Saute Onions in the pan.
  • Whisk eggs in a bowl till they are fluffy. Add salt and pepper.
  • Add sautéed onions, green pepper, green chillies to eggs. Mix well.
  • Cook Potatoes in a pan with oil/butter, until they are tender.
  • Pour egg mixture over the cooked potatoes.
  • Cook for few minutes on a low-medium heat, until golden brown.
  • Flip and cook from the other side too.
  • Cut into triangle/pizza like slices, and serve.

Remember, Egg and Potatoes are the main ingredients, rest is your taste and imagination. You can also use Mushrooms and Peas. It can be eaten hot or cold, and thus it can be a good picnic dish too. 😎

Mouthwatering Monday – Aamras

Aamras is a famous Indian Mango delicacy. Best thing about aamras is that, it can be eaten as a dessert and also along with Poori or Chapati. It’s the easiest dessert to make and that too with the natural mango taste. No artificial, healthy food if you contain the sugar level. 🙂

And, it tastes Yummy!!!! 😀

All mango lovers, do try out this very simple recipe.

 

Ingredients:

  • 2 Mangoes (preferably Alphonso mangoes)
  • 4 tbsp Sugar ( Or as per your taste and sweetness of Mango used. I prefer less sweet and used only 2 tbsp)
  • ¼ tbsp Cardamon Powder
  • 1-2 saffron strands (I didn’t used them, but would prefer using them)
  • 3 tbsp Milk (optional, based on the consistency you want)

 

Method:

  • Wash, peel, and chop mango pulp.
  • Blend mango pulp in a blender, along with sugar and cardamon powder, to a fine puree.
  • Add milk to blender, as per consistency desired.
  • Check for sweetness too. Add more sugar if required.
  • Serve chilled. (you may like to put it in refrigerator before serving)

 

That’s it. All it took is 10 minutes, and dessert is ready.

You can eat it separately as a dessert or if you like you can top the taste by serving it with vanilla ice-cream.

I have served it with raisins and cashews. It looked awesome and tasted heavenly. 🙂

I Thought My Husband Was Going Deaf

A normal day to day conversation between me and my hubby, Abhishek Singh.

Me: When do you want to have dinner?

Hubby: Hmn.

Me: Shall I bring the food?

Hubby: Hmn. (while watching TV)

Me: I am bringing the food. Okay?

Hubby: Hmmn. What? okay….

I have served food and now waiting for him to eat. Kids are already circling around like vultures, just not for eating but to topple everything and create a mess.

Me: Come, it’s getting cold.

Hubby: Hmn. okay.

Me: (after 5 minutes) Come and sit. (In a high pitch voice now, actually little higher than high)

Hubby: (as if he has just woken up) What? Why did you served it? I don’t want to eat right now?

Me: WHAT??? (I don’t have to tell you, what was my voice pitch at that point)

Hubby: I told you. Not now. I am not hungry.

Me: You could have said it to me earlier. When I asked you, I think just a hundred times. Angry smile

Hubby: Oh, didn’t I say it. Oh. Okay, I will eat later. Sorry yaar. (With a smile on his face. Not helpful at all)

I am now babbling so many things at once. Putting back everything, before kids get any chance to ruin whatever is left.

After 5 minutes.

Me: So, when do you want to eat? After how much time?

Hubby: Hmmn.

I thought there must be some problem with my hubby Abhishek Singh’s ears, but later when I share my ordeal with my friends, I realized this disease is pretty common and incurable. 😦

It’s called Being Husband.

Yes, this is to tell the world that I am sick today. So, please sympathize with me and send me loads of get well soon wishes. (Money is also accepted)

My running nose and feverish body is telling me to relax and go to sleep. But, even sleep is eluding my eyes. So, what better way to pass the time then to write about something you are craving for.

What do you crave for when you are sick?

Some crave for hot cup of coffee, some a warm hug, some a nice cozy touch and some for peace and quiet. I crave for all the above and more. Too demanding 🙂

 When I was little (little as in a kid), I used to eagerly wait for this time. Time when I would get a small fever or catch a cold. Reason was my Mom. She used to just left every house work to take care of me and pamper me. Ohhh… I so much crave for that pampering.

She would have gotten me a full glass of hot milk and would have rubbed vicks vaporub all over me. Yeah, seriously all over me. Sometimes she’ll put that in my hairs too and I used to scream at her the very next day when getting ready for school. J

She used to push down all the medicines through my throat. She knew the moment she will look the other way, I will throw them in the sink. 🙂 I was a very unmanageable kid. Hmmnn…. my kids have turned out much better then me as a kid. Thank God and thanks hubby for your genes 🙂

 Now that I don’t have my mom to pamper me, I feel that getting sick is no more fun. Its bad, really bad. As not only everything hurts, also I have to take care of my three kids, still taking care that they do not catch it.

Craving never ends. So, now I am craving for my hubby to get home and take care of me. Or at least take care of kids, so I can make a hot cup of ginger tea and go to bed with a book on my side, peacefully.
